Preparing yourself for the challenges that go along with an intense learning program can be difficult, but just remember, many have graduated before you and with some creativity and organization, you may be surprised at what you could accomplish.   • You will spend a lot of time cleaning. From the dishes, pots, pans, and utensils you use to thoroughly cleaning the kitchen.
  • You’ll be cutting a lot of potatoes. Before you even look at a roast, you will hone your knife skills on vegetables like carrots and potatoes.
  • You will need to learn math. Not all classes are in the kitchen. You will see the inside of a classroom before you see the kitchen. You will need to know how to calculate the costs of a finished dish as well as assess purchase costs and budget in order to maintain a profitable business. Not to mention how to make sure you have the right ratio of ingredients in your dishes.
  • You will have to taste everything you make. You will be expected to taste each dish you make, which means you will have to know how ingredients should taste, even if you don't particularly care for them.
