Culinary Competition Combines Flavor and Presentation for One Tasty Experience
At the Culinary Institute of Virginia, contests are a big deal. It’s a great way for students to sharpen their skills and creates some healthy competition. Oh yes… there’s also the scholarship money. One contest that’s always a big hit is called Best of Bites, a tremendous collaboration with Atlantic Shores, an award-winning retirement community located in Virginia Beach.
Here’s how the contest works: Students must create a fresh, brand new recipe. It can be savory or sweet, crunchy or creamy, raw or cooked. They are reminded that because we also eat with our eyes, they have to think about colors, textures, and presentation. Additional requirements include:
- Recipe must be able to produce 75 samples at industry standard portions
- Dish should be easy to pick up and eat in one or two bites
- Portion cost cannot exceed $.50
- Entry must include a recipe and a cost breakdown
Residents of Atlantic Shores serve as judges and are asked to evaluate each entry based on choice of ingredients for freshness, color, flavor, creativity, and portion size, as well as ease of consumption while standing. Atlantic Shores also provides the scholarship money, $3000 in all.
“This is been a wonderful, enduring partnership,” said Culinary Institute of Virginia Campus Director Glenn Mack, telling the Atlantic Shores guests, “we want you to know how much we appreciate not only your moral support, but financial support as well!”
After counting the votes, the results provided an impressive surprise with this year’s winning team being comprised of students who are only in their second term!
First Place: Team Nubies Justin Oller and Angela Oakman
- Dish: Potato Bites with Crumbled Bacon, Cheddar, Chive Spread on a Crispy Potato Gaufrette
- Each student won a $600.00 scholarship
Second Place: Jenna Wackowski and Tristan Veneziano
- Dish: Banana Entremet, or Banana Cake on a Vanilla Wafer Crust topped with Chocolate Ganache, Swiss Meringue and Bruleed Bananas
- Each student won a $500.00 scholarship
Third Place: Vincent Hermogino and Ashley Rey
- Dish: Reuben Pinwheels of Corned Beef, Swiss Cheese, and Sauerkraut with Russian Dressing, topped with House-made Pickles
- Each student won a $400.00 scholarship
These three winners will be asked to make a much larger batch of their winning entries for this year’s graduation. Each team will produce 750 portions for the graduates and their guests to enjoy following ceremonies at the Sandler Center for the Performing Arts. Congratulations to the winners and a great job by all involved!
